We are running Enterprise 6.3 12-03-13 with a Halcust dated 12-08-15.
We have setup Mail Texts for Purchase Orders and have ticked the tickbox to say “Do Not put Record Details in Mail Body”. However, the email that is produced has the detail of the purchase order in the main body of the email.
How can we stop this from happening?

It appears that this is not an issue with the latest Enterprise 7.2 release. Marking the "Do not put the Record Details in Mail Body" option does indeed remove the details from the Purchase Order from the email's text (in which case only a PDF copy of the Purchase Order is attached to the email).
Please consider updating to the latest 7.2 version of the software.
